Stall Converter question?

Right now i have a 350 sbc in my 85 scottsdale, it has a th350 with shift kit and 3.73 limited slip rearend, i believe the torque converter is stock. My question is how much of a difference would it make if i was to put a 2500 stall converter in my truck. Would i notice much of a difference at all? I believe the truck weighs around 4300 lbs with me in it, need any more specs just say so, thx for your time
